Green Chile Turkey Joes are part of a great weeknight meal. 30 minutes or less, and you can be enjoying this lightened up version of a sloppy joe, with a southwest twist.

For Freaky Friday Summer, I was assigned to Christie at A Kitchen Hoor's Adventures. Christie's, been in the kitchen since she was old enough to start helping out, so she learned lots from her mom and dad. She has a focus on low fat and healthy recipes, so it was really inspiring for me to read so many delicious recipes with a healthy twist.
The recipe I picked to try was Green Chile Turkey Joes, and wow was that a great choice. These turkey joes were such a hit, and definitely a recipe we will be making again. They have tons of that Southwest flavor I love with enchilada sauce, chiles, and spices, but they aren't spicy. Which is great because that kept Truckin' Man happy and loving these just as much as I did. Since I did want a little kick to them, I added some jalapeno to top my sandwich. Perfection!
I did simmer these turkey joes until they were super thick, since that's how I like them. The next day, I enjoyed some leftovers in a low carb wrap. Score!
One of the other recipes of Christie's I want to try is her Grilled Meatballs and Spaghetti with Mezzetta Napa. It is right up my alley, as this dish was inspired by the Minnesota State Fair! So many years I spent sampling food from the best state fair! Next up to try will be Slow Cooker Chicken Tikki Masala... Sounds so good!

Green Chile Turkey Joes
2 tsp extra virgin olive oil
1 cup chopped onion
4 ounce can green chiles
1 lb ground turkey
10 ounce can green enchilada sauce
1 1/2 tsp salt
1/2 tsp black pepper
2 tsp ancho chile powder
1 tsp cumin
1/4 cup sour cream (low fat if you like)
Buns
Cheese (optional)
Jalapenos (optional)
In large skillet, heat extra virgin olive oil over medium high heat. Add onions, and saute until they begin to soften. Add the green chiles. Add ground turkey, breaking up with spoon. Cook until no longer pink. Add salt, pepper, chile powder, and cumin. Simmer until thickened. Remove from heat, and add sour cream. Stir well.
